Beren-lunch




Soms zie je iets op pinterest voorbij komen waarvan je denkt: ohhh, dat ga ik een keer maken. Het probleem in de vorige zin zit 'm bij de woordjes "een keer". Want, kennen jullie dat? Het komt er nooit van en de pins die je zorgvuldig bewaard hebt op je stylische bord, sneeuwt onder door de talloze (zeg maar gerust honderden) pins die volgen. Wat een zinloosheid, zul je denken, maar niets is minder waar! Pinnen op pinterest is zo ontspannend dat ik er van overtuigd ben dat er vele aandoeningen mee voorkomen zijn. (Denk hoge bloeddruk, hartfalen, burn-outs, depressiviteit) Dit alles moet nog wetenschappelijk onderzocht worden maar dat is slechts een formaliteit.

Sometimes you see a picture on Pinterest that makes you think: oooh, I'm going to make that sometime. The problem in the previous sentence is in the word 'sometime'. Because, do you know that? It never happens and the pins you carefully saved on your stylish board go unnoticed because of the countless (let's say hundreds) of pins that follow. Useless, you may think, but nothing could be further from the truth! Pinning on pinterest is so relaxing, I'm convinced much trouble has been prevented by it. (Think of high blood pressure, heart failures, burn-outs, depression) All this still needs to be scientifically proven but that's just a formality. 


Vandaag was echter een grote dag want ik maakte iets volstrekt onzinnigs van één van mijn pinbords! Het is niet moeilijk en brengt zoveel vertedering met zich mee, dat het alleszins de moeite waard is. Hieronder het recept:

Today, however, was a big day because I made something completely useless from one of my pin-boards! It's not hard and it's so cute, it's worth it in every way. Here's the recipe: 

Rijst koken en kruiden zoals je lekker vindt, in ieder geval een beetje soyasaus erdoor voor de kleur (ik had nasi over van gisteren en heb dat gebruikt) Laat het afkoelen in de koelkast, zodat je het later goed kunt vormen. Als je zover bent, vorm je voor het hoofdje een mooi bolletje en voor de oortjes twee kleinere bolletjes. Je bakt van 3 eitjes die je goed losgeklopt hebt en een beetje peper en zout door gedaan hebt, twee dunne omeletjes. Snij één omelet bij voor het dekentje en uit de andere snijd je twee kussentjes, want dat ligt lekkerder dan één, haha. Leg op een bord de kussentjes en daarop het hoofdje met de oortjes. Frummel nog wat aan de oortjes totdat je helemaal tevreden bent. Vorm ook een armpje als je dat leuk vindt. Leg twee knakworstjes (frankfurters) als lijfje een beetje schuin neer, dat ziet er net iets leuker uit. Drappeer het dekentje eroverheen, dus ook een beetje schuin. Het armpje steekt dus aan de zijkant onder het dekentje uit. Snij een klein rondje van een stukje mozzarella en vorm twee boogjes op het snuitje met twee takjes rozemarijn. Voor de streepjes oog kon ik niks bedenken dus dit zijn twee hagelslagjes. Goede combi, toch?! Alles is nu klaar. Je kunt het als je wilt nog even in de magnetron plaatsen, maar dat heb ik niet gedaan en het was heerlijk. Oh ja, ik heb nog een hartje op het dekentje gespoten van ketchup. ❤️ Anne

Cook rice and spices the way you like it, add some soy sauce for the colour (I had nasi as leftover from yesterday and used that) Let it cool in the fridge, so you can shape it well later. When you're ready, form a nice ball for the head, and two little ones for the ears. Fry 3 eggs that you've beaten well and added some salt and pepper to. Crop one omelet for the blanket and cut two pillows from the other omelet, because two pillows are comfier than one, haha. Put the pillows on a plate and put the head with the ears on them. You may change the ears a bit until you're satisfied. Also form an arm if you like. Take two sausages (frankfurters) for the body, place them a bit skew, looks a little nicer. Drape the blanket over it, so a little skew as well. That way the arm sticks out from underneath the blanket, at the side. Cut a small circle from a slice of mozzarella and form two arcs on the snout with two sprigs of rosemary. I couldn't really think of something to use for the striped eyes, so these are two chocolate sprinkles. Great combination, right?! Now you're ready. If you want, you can put it in the microwave, but I didn't do that and it was delicious. Oh, yeah, I also squirted a heart of ketchup on the blanket. ♥ Anne

De lampenkap




Het is augustus 2016.
Zutphen heeft zich ondergedompeld in vakantiesferen.
Toeristen slenteren door ons mooie stadje; vaste klanten posten foto's van weer andere mooie stadjes -in andere landen- op andere plekken.
Ik wil ook even weg; zon en rust, avonturen en inspiratie. Dat zijn mijn wensen. En lekker eten. Dat hoort eigenlijk altijd bij mijn wensen.
Het budget is echter niet "himmelhoch jauchzend" en de mogelijkheden beperkt. Want Billie moet bijvoorbeeld mee (zonder Billie geen vakantie) en ik wil met de auto. Stel dat ik ergens een rotan stoel zie die mee moet, dan moet ie ook mee! Of een lampenkap. Daar kom ik later op terug.

It's Augustus, 2016.
The vacation vibes are everywhere in Zutphen.
Tourists wander through our pretty city; customers post pictures of other beautiful cities - in other countries - in other places.
I want to go away for a while as well; sun and calmness, adventures and inspiration. Those are my wishes. And tasty food. This, actually, always belongs to my wishes. 
However the budget isn't endless and the possibilities are limited. Billie has to come with us (without Billie there's no holiday) and I want to travel by car. Suppose I spot a rattan chair that I'd like to take with me, I have to take it with me! Or a lampshade. I'll come to that later.

Op een avond zitten mijn lief en ik aan de keukentafel -kaarsje aan, wijntje erbij- als we al googelend bij "Albergo Ristorante Carenno" belanden. Hoog in de bergen boven Lecco; dus vlakbij het comomeer. Het comomeer: dat betekent zoveel als: goddelijk eten, schattige stadjes, zwemmen in het meer, varen met de boot, Milano in de buurt en een afstand die goed te berijden is.

We doen het! (Over zulke dingen moet je niet te lang nadenken)

One evening my love and I sit at the kitchen table - a candle, some wine - and after googling for a while, we see 'Albergo Ristorante Carenno'. High up in the mountains above Lecco; so near Lake Como. Lake Como: it means as much as: heavenly food, cute cities, swimming in the lake, sailing with the boat, close to Milan and a distance that is fine to drive. 

We're doing it! (You shouldn't think about things like this for too long) 

Op een zondag rond half 5 in de middag komen we aan; na een bergbeklimming met onze oude knar van een auto waar menig tour-de-france rijder een moord voor zou doen.
Diezelfde avond maken we de adembenemenste zonsondergang "ever seen" mee vanaf ons balkon, dat uitkijkt op het meer en de bergen aan de overzijde; we eten de lekkerste spaghetti carbonara ooit en okay -ik zal eerlijk zijn- we drinken 2 flessen verukkelijke witte wijn uit de Piemonte plat.

De vakantie is begonnen!

On a Sunday, around 4:30 p.m. we arrive; after a climb in the mountains with our old car that many tour-de-france riders would kill for. 
That night we experience the most breathtaking sunset 'ever seen' from our balcony, which overlooks the lake and the mountains at the other side; we eat the most delicious spaghetti carbonara ever and okay - I'll be honest - we drink two bottles of delicious white wine from Piedmont. 

The holidays have begun! 



In de dagen die volgen bezoeken we Varenna (schattig kunstenaarsdorpje) Milaan (de gouden driehoek niet te missen voor het hoogste gehalte bling-bling) Belaggio (voor altijd verkocht aan dit mondaine stadje aan het meer) een wijnboerderij ergens richting Bergamo (man-o-man) een agriturismo op zondag waar we lunchten tussen de Italiaanse families) Lecco (wanneer zijn hier de winkels eigenlijk wel open) Mennagio (prachtige modezaak en zalig pleintje met terrasjes) Del Lago (zwemmen en zoenen in het meer en urenlang lezen op je gehuurde strandbedje voor 5 euro per dag) en we wandelden een dag vanuit Carenno naar de top van de berg (663 hoogtemeters!!) en via een omweg weer naar beneden (dood).

In the days that follow we visit Varenna (lovely artist village), Milan (you can't miss the golden triangle for all the bling-bling), Belaggio (I'll always be in love with this mundane city at the lake), a winery in the direction of Bergamo (man o man), a farmhouse on Sunday where we lunched among the Italian families, Lecco (are the shops there ever opened?), Mennagio (wonderful fashion store and lovely square with terraces), Del Lago (swimming and kissing in the lake and reading for hours on your hired beach bed for 5 euros a day), and one day we hiked from Carenno to the top of the mountain (663 altimeters!!) and via a side road back down (dead). 

Ons "thuis" voor twee volle weken voelt aan als een waar paradijs! Okay, ik geef toe, geen George Cloonie te bekennen hier en helaas ook geen donzen dekbedjes. Maar who cares, als al dit goddelijks binnen handbereik ligt en je dit in je hotel terug vindt:

- een heerlijke kamer met dito bed, met balkon en fantastisch uitzicht
- iedere avond een zalige, echt Italiaanse maaltijd zonder poeha, maar oooohh wat lekker
- een familie die dit hotel runt, waarvoor geen moeite teveel is. Die je het gevoel geeft dat je Maxima
  herself bent, je alle privacy van de wereld geeft, voor je klaarstaat wanneer je maar wilt (ik bedoel,
  als je middden in de nacht een glaasje limoncello op je balkon laat vallen en het valt in werkelijk  
  duizenden stukjes; dan komen ze het opruimen! En ze zijn niet eens boos!)
- een grote ruimte voor het ontbijt- en dinerruimte die zo ouderwets is, dat ie mega-hip is, met stalen
  kozijnen om grote raampartijen aan de terraszijde, prachtige collectie blauwe bordjes boven het
  buffet. Kan echt zó in de VTwonen.

Our "home" for two full weeks feels like paradise! Okay, I admit, no George Clooney around here and neither there are down comforters. But who cares, when all those heavenly things are within reach and you find this in your hotel:

- a delightful room with ditto bed, with balcony and amazing view
- every evening a blissful, real Italian meal, simple but ooohhh so good
- a family owning this hotel, for who no effort is too much. A family that gives you the feeling you're Maxima herself, gives you all the privacy in the world, that's there for you whenever you want (I mean, when you drop a glass of limoncello on your balcony in the middle of the night and it literally breaks into a thousand pieces; they're there to clean it up! And they aren't even mad!) 
- a large space that is the breakfast- and dining room and which is so old-fashioned, it's super hip, with steel window frames around big windows at the terrace side, a beautiful collection of blue plates above the buffet. It can go straight into VTwonen. 


Het is moeilijk om deze vakantie te beschrijven.
Het vuurwerk in Carenno op de vierde avond, waar kwam dat nou vandaan -ik bedoel- er woont hier geen mens (denk je).
De vallende sterren op avond 8. Ik wist gewoon op het laatst niet meer wat ik moest wensen.
De rit naar Bellagio langs de kust. Wat was ik blij dat ik niet achter het stuur zat. Ik heb mijn ogen uitgekeken -al die vergezichten, huisjes, strandjes, bootjes, bergen oh my oh my.
Het ijsje dat ik bestelde na een zwem-dag aan het meer. Ik dacht dat het met liquer was; klinkt logisch toch?! Maar het was liquorzi ofzoiets: ijs met dropsmaak. Ook lekker.
De kazen die ik kocht in "ons" dorpje Carenno. Kazen? Ja, kazen en ham en frutti di mare, olijven en salami. Als aperitivo. Ik was 9 euro kwijt. Hahaha (bye bye albert heijn)

It's hard to describe our holiday.
The fireworks in Carenno on the fourth night, where did that come from - I mean - hardly anyone lives here (you think).
The shooting stars on the eighth night. At the last star I didn't know what to wish for anymore.
The ride from Bellagio along the coast. I was glad it wasn't me who was driving. I was staring out of the window all the time - all the views, houses, beaches, boats, mountains, oh my oh my. 
The ice-cream I ordered after a day of swimming at the lake. I thought it was something with liquor; sounds logic, doesn't it? But it was something like 'liquorzi': ice with licorice-flavour. Tasty as well.
The cheese I bought in 'our' village Carenno. Cheese? Yes, cheese and ham and 'frutti di mare' (seafood), olives and salami. As appetizer. It costed me 9 euros. Hahaha (bye bye albert heijn)

En het hotel.
Het hotel maakt het af.
Met het kleine liftje; de bloemetjestegels in de badkamer tegen een schril contrast van reuzengrote krakend witte badlakens. De watermeloen die je toegeschoven krijgt na een lange wandeling. Ik hou helemaal niet van watermeloen.

Maar deze smaakt naar meer.

And the hotel.
The hotel is the finishing touch. 
With the small elevator; the floral tiles in the bathroom in contrast to the giant, squeaky white towels. The watermelon you get after a long walk. I don't even like watermelon.

But this one tastes morish.

EASTER INSPIRATION

Het paasweekend komt er aan. Wat ga jij doen?
Ik heb een aantal leuke, makkelijke ideetjes voor je verzameld om zelf te maken:

The easter weekend is coming. What are you going to do?
I've gathered a few nice, simple ideas for you, to make yourself: 

Kies een mooi ijzerdraadje (nog mooier; koperdraad) en buig oortjes om een kroontje. Zet dit op de gekookte eitjes et voila!

Pick a pretty iron wire (even better: copper wire) and bend ears around a crown. Put it on the boiled eggs, et voila! 

Voor deze lieve kuikens koop je een doosje kwarteleitjes. Kook ze hard en schrik ze in koud water. Pel de eitjes en snij er ongeveer 1/3 deel vanaf aan de bovenkant. Wip met een klein lepeltje (geen zilver, want daar kan ei niet tegen) het eigeel eruit aan alle kantjes en mix dit met joghurt, beetje mayo, zout, kerrie, beetje tabasco. Even proeven wat je lekker vindt. Vul een spuitzak met klein rond spuitmondje en vul hiermee de eitjes. Snijd kleine stukjes van zwarte olijven en maak hiermee de oogjes. Een klein stukje wortel gebruik je als snaveltje.

For these sweet chickens you buy a box of quail eggs. Boil them hard and rinse them in cold water. Peel the eggs and cut off about 1/3rd of the upper side. Swipe out the egg yolk, at all sides, with a small spoon (no silver, an egg can't handle that) and mix with yogurt, a little mayonnaise, salt, curry, a little tabasco. Taste what you think is good. Fill a piping bag with a small, round nozzle and with this, fill the eggs. Cut small pieces of black olives for the eyes. A small piece of carrot you use as beak. 

 Bewaar een mooie eierdoos en tik een paar witte eieren voorzichtig aan de bovenkant kapot. Giet de struif in een kom, daar kun je een lekker omeletje van bakken.Pel de eierschaal een beetje af tot je de opening mooi genoeg vindt. Spoel het ei aan de binnenkant schoon en strooi er een beetje potgrond in. Plaats hierop het witte of blauwe druifje en vul het ei verder op met aarde. Zet in de eierdoos en geniet.

Keep a beautiful egg box and break a few white eggs carefully on the upper side. Pour them into a bowl, to bake a tasty omelette. Peel the eggshell a little, until you like the opening. Wash the egg on the inside and sprinkle a little potting soil in it. On this, place the white or blue grape and fill up the rest of the egg with soil. Put it in the egg box and enjoy.

 Bewaar wat glazen potten. Knip uit zwarte plastic folie figuurtjes (op internet te vinden) die je eerst aan de achterzijde getekend hebt. Je kunt ook een stift kopen waarmee je op glas kunt tekenen bij de hobbywinkel. Dan teken je het haasje er zelf op.

Keep some glass jars. Cut figures out of black plastic foil (you can find them on the internet) you've drawn on the back first. You could also buy a pencil to draw on glass at the hobby shop. Then you draw the hare on it yourself. 
 Ook leuk, maar net iets te laat om nu nog te beginnen; tuinkers zaaien in de met potgrond gevulde eierschalen.

Also fun, but a little too late to start now: seed cress in the eggshells filled with potting soil.

 Of knip konijntjes (of haasjes) uit wit vilt (ik zou wit foam kopen bij de hobbywinkel) en lijm er twee tegen elkaar met een prikkertje of cakepopstokje ertussen. Leuk op een taart, in de blokjes kaas, etc etc

Or cut bunny's (or hares) from white felt (I'd buy white foam at the hobby shop) and glue two against eachother with inbetween a toothpick or cakepop stick. Lovely on a pie, in the blocks of cheese, etc etc 

Voor deze lieve broodjes koop je gewoon zo'n rol afbakbroodjes van Danerolles oid. Je knipt in het nog ongebakken deeg aan de bovenkant zodat je met je vingers (handen wassen) oortjes kunt vormen en prikt met een sateprikker gaatjes voor oogjes. Vorm alles iets meer overdreven dan het er uit moet komen te zien, omdat het deeg nog gaat rijzen in de oven.

For these sweet breads you just buy a roll of Danerolles. You cut in the still unbaked dough on the upper side so you can form ears with yours fingers (wash your hands). You prick holes for the eyes with a skewer. Only prick a little further than it needs to become, because the dough is going to rise in the oven.
S Avonds bij de lamsbout ;-) zet je wat verse kruiden op tafel in de lege eierschalen.

In the evening with the leg of lamb :-) you put some fresh spices on the table in the empty eggshells.  
Een vlaflip als toetje met twee lange vingers als oren.
Eitje toch?!

Seconds


Het voorjaar komt eraan en we hebben er zin in!
Lekker in je kast neuzen welke items nog leuk zijn en welke er weg mogen.
Dat ene vestje, dat je kocht omdat het zo'n lief biesje heeft maar eigenlijk totaal je kleur niet is..

Sinds een half jaar hebben we bij MOOI een afdeling "SECONDS".
Daar hebben al die items een plekje: op weg naar de volgende liefhebber!

Spring is coming and we're looking forward to it!
Looking in your closet while thinking which items are still nice and which can go.
That one cardigan you bought because it has such a sweet piping, but is actually not your colour at all...

Since half a year, we have a section 'seconds' at MOOI.
There all these items have their own place: on their way to the next loving owner! 


Het grootste deel van de opbrengst gaat weer terug naar de inbrenger: een zogeheten win-win situatie!
We kunnen dit ook met gerust hart "duurzaam" noemen en daar voelen we ons wel bij.
De seconds die we verkopen zijn altijd oorspronkelijk gekocht in onze shop, zodat je nog steeds verzekerd bent van de beste kwaliteit en  smaak :) Alleen een ander prijsje, maar dat is logisch.
Je zult maar net geluk hebben dat er een pareltje in jouw maat tussen hangt!

The main part of the proceeds goes back to the one who brought it: a so-called win-win situation!
Confidently we can call this 'sustainable' and we feel good about it.
The seconds we sell are originally bought in our shop, so you're still sure about the best quality and taste :) Only a different price, but that's logical. You'll have some luck when you see a beautiful item in your size! 


En heel heel soms... zelfs een compleet "nieuwe"second ertussen. Oe-la-la..

And sometimes... there's even a complete 'new' second. Ooh-la-la..

Shopping

Vorige week gingen we "op inkoop". Voor het eerst hadden we al onze grote merken in een paar dagen achter elkaar gepland, wat betekende dat we volop "on Tour" waren.

Druk, maar super fijn om een compleet overzicht te hebben van alles wat we kozen.

Last week we went shopping for our shop. For the first time we had all the big brands planned in a few days after eachother, which means we were fully 'on tour'. Busy, but nice to have a complete overview on everything we chose. 


We hebben super mooie items ingekocht in een prachtig kleurenpalet! We kunnen alvast iets vertellen over de modetrends voor het najaar: coltruitjes zijn weer terug in het modebeeld evenals broekrokken. De laatste trend hebben wij niet aanvaard ;-) Wel hebben we colletjes ingekocht en prachtige blouses; sommige ook met een opstaande boord.

Verder hebben we bewust gekozen voor veel kleuren; groen in allerlei tinten en ook weer roze, van poederachtig tot lekker fel. Een glimmertje hier en daar zien we ook nog steeds net als de kleur blauw. Verder zet de sports-look door; bijvoorbeeld een chique trainingsbroek met daarop een kek jasje; of de zgn sweaterjurk, met capuchon.

Dit zijn slechts een paar voorbeelden en ik hou me in, want over het modebeeld kan ik uren uitwijden.

We purchased really pretty items in a beautiful color palette! We can already say something about the autumn fashion trends: turtlenecks are back in style, just like culottes. We didn't accept the last trend ;-). But we did purchase some turtlenecks and gorgeous blouses; some also with a raised rim.

Furthermore, we consciously chose for a lot of colours; green in all shades and again pink, from pastel to bright. We also still see a shimmer here and there, and the colour blue. The sports-look also remains in style; for example a classy sweatpants with a pretty jacket; or the so-called sweaterdress, with hood. 

These are just a few examples and I'm holding myself back, because I can spend hours talking about fashion. 




Tussen de afspraken door dronken we heerlijke koffie bij Coffee and Coconuts in Amsterdam en we bezochten het Lloyd hotel. Wat een juweel is dat. Met een geweldige historie.

Between the meetings we had delicious coffee at Coffee and Coconuts in Amsterdam and we visited the Lloyd hotel. What a treasure it is. With an amazing history. 


Maar nu weer naar de realiteit van alle dag; bij terugkomst in de winkel bleken er weer volop nieuwe items voor het voorjaar te zijn binnen gekomen!

Lente kleurtjes! Mmmmm...

Now back to everyday's reality; when we came back in the shop, it seemed that many new spring items came in! Spring colours! Mmmmm...

shop-upgrade

Afgelopen weekend hebben we hard aan de winkel gewerkt.
De vloer, die donker was, is volledig geschuurd en in de whitewash gezet.

Last weekend we worked hard on the shop.
The floor, which was dark, is completely sanded and whitewashed.


Het resultaat is geweldig!

Cooking


Maandag had ik een vrije dag. Hij lag volmaakt blank voor me uitgestrekt.
Ik besloot om lekker te gaan kokkerellen.
Ik hou namelijk van koken. Het ontspant me en ik kan er mijn creativiteit in kwijt.

Ik besloot een Aziatisch gerecht te maken. Het heet SHIU MAI en het is een dumpling, zo'n heerlijk zacht deeghapje.

Ik maakte er een frisse salade bij van ijsbergsla en avocado's met een pittige dressing van sjalotjes, knoflook, ansjovis, olie en azijn. Mail me gerust voor het recept van de dressing; die is top en een week houdbaar in de koelkast!

Hieronder het recept van de SHIU MAI.

Kneed een deeg van
1 kg bloem
1 tl zout
1 ei
500 ml warm water

Laat onder een theedoek een half uur op een warme plek staan.
Maak ondertussen de vulling.
Rasp hiervoor 40 gr gemberwortel en snij 200 gram champignons, 1 ui, een bosje lente-uitjes fijn. Mix dit door 800 gram varkensgehakt samen met 4 eetlepels rijstwijn, 4 eetlepels sojasaus, 2 eetlepels sesamolie, 1 theelepel zout, 4 eetlepels maizena, 2 eiwitten en naar smaak vijfkruidenpoeder.

Rol het deeg uit op een met bloem bestoven werkblad en steek er ronde of vierkante lapjes uit met een doorsnede van +_ 8 cm.
Schep in het midden van elk deeglapje een bergje vleesvulling en maak de randen van de vleesvulling vochtig met water en een kwastje.
Vouw de zijden van het deeg naar elkaar toe en knijp zachtjes dicht. Laat de bovenkant open.
Vet een stoommand met olie in (ik gebruikte zonnebloemolie) en stoom de dumplings ongeveer 10 minuten.
Serveer met soja- en chilisaus.

SHIU MAI zijn in de diepvries heel lang houdbaar. Stoom ze zonder ontdooien ongeveer 15 minuten.

Monday I had a day off. I had nothing planned and decided to go cooking, because I really love to cook. It makes me feel relaxed and I can put all my creativity in it. 

I decided to make an Asian dish, named SHIU MAI. It's a dumpling, a delicious, soft dough snack. I made fresh salad with it, containing iceberg lettuce and avocados with a spicy dressing of shallots, garlic, anchovies, oil and vinegar. You may e-mail me for the recipe of the dressing; it's great and you can keep it in the fridge for a week!

Here the recipe of the SHIU MAI:
Knead a dough from
1 kg flour
1 tsp salt
1 egg
500 ml warm water

Leave it underneath a towel for 30 minutes, on a warm place. 
In the meantime, make the filling. 
For this, grate 40 gr of gingerroot and chop 200 gr mushrooms, 1 onion and a bunch of spring onions. Mix it with 800 grams sausage meat, 4 tablespoons rice wine, 4 tablespoons soy sauce, 2 tablespoons sesame oil, 1 tsp salt, 4 tablespoons cornstarch, 2 egg wites and if you like, five-spice powder. 

Roll out the dough on a floured surface and cut out round or square pieces with a diameter of around 8 cm. 
In the center of each piece, spoon a pile of meat filling and make the edges of the meat filling moist with water and a small brush.
Fold the sides of the dough to eachother and squeeze gently. Leave the top open. 
Grease a steamer basket with oil (I used sunflower oil) and steam the dumplings for around 10 minutes. 
Serve with soy and chili sauce. 

SHIU MAI can be kept in the freezer for a long time. Steam them without thawing for around 15 minutes.
